Ingredients

  • couscous – 2 cups / 360 g
  • fish stock – 4 cups / 960 ml
  • mixed seafood (clams, mussels, shrimp, squid) – 2 lbs / 900 g
  • olive oil – 1/4 cup / 60 ml
  • garlic, minced – 4 cloves
  • tomatoes, chopped – 2 cups / 360 g
  • onion, finely chopped – 1 medium
  • parsley, chopped – 1/2 cup / 30 g
  • cayenne pepper – 1/2 tsp / 2 g
  • salt – to taste
  • black pepper – to taste
  • lemon wedges – for serving

Instructions

  1. Heat the olive oil in a large pan over medium heat. Add the onion and sauté until translucent, about 5 minutes.
  2. Stir in the garlic and cayenne pepper, cooking for another minute until fragrant.
  3. Add the chopped tomatoes and cook until they start to soften, about 5 minutes.
  4. Pour in the fish stock and bring to a simmer. Season with salt and black pepper.
  5. Add the mixed seafood and cover the pan, letting it cook until the seafood is just done, about 7-10 minutes.
  6. In a separate bowl, place the couscous. Pour the hot seafood broth over the couscous, cover with a lid and let it sit for 5 minutes.
  7. Fluff the couscous with a fork, mix in the chopped parsley, and arrange the cooked seafood over the top.
  8. Serve the dish with lemon wedges on the side.
