Ingredients
- chicken broth – 6 cups / 1440 ml
- rice noodles – 1 lb / 450 g
- boneless chicken breast – 8 oz / 225 g
- pork loin – 8 oz / 225 g
- ham – 4 oz / 115 g
- mushrooms – 1 cup / 100 g, sliced
- cabbage – 1 cup / 75 g, thinly sliced
- spring onions – 2, finely chopped
- fresh ginger – 1 tbsp / 15 g, sliced
- soy sauce – 2 tbsp / 30 ml
- rice wine – 1 tbsp / 15 ml
- white pepper – 1 tsp / 5 g
- salt – to taste
- vegetable oil – 2 tbsp / 30 ml
Instructions
- Heat the chicken broth until it reaches a gentle boil, then keep simmering to ensure it remains very hot.
- Cook rice noodles according to package instructions. Drain and set aside.
- Slice chicken breast, pork loin, and ham thinly.
- Heat oil in a pan, sauté ginger until fragrant. Add chicken and pork slices, cooking until just done. Set aside.
- Arrange all ingredients separately on a platter.
- To serve, bring broth to the table in a pot. Allow diners to add their choice of raw and cooked ingredients to the cup of steaming broth where items will cook quickly.
- Add soy sauce, rice wine, white pepper, and salt to taste.
