Ingredients

- All-purpose flour – 1/2 cup / 60 g
- Milk – 1 cup / 240 ml
- Nutmeg, ground – 1/4 teaspoon
- Parsley, finely chopped – 2 tablespoons
- Salt – to taste
- Black pepper – to taste
- Eggs, beaten – 2 large
- Breadcrumbs – 1 cup / 100 g
- Vegetable oil, for frying – as needed
Instructions
- In a pan, melt butter over medium heat and sauté the onion and garlic until translucent.
- Add shrimp and cook until just pink. Remove from heat and chop finely.
- Return shrimp mixture to pan, sprinkle flour over, and stir well to form a roux.
- Gradually add milk, stirring constantly, until you achieve a thick béchamel sauce.
- Season with nutmeg, salt, and pepper. Stir in parsley, and let the mixture cool.
- Shape cooled mixture into small cylinders. Dip each cylinder in beaten egg, then coat with breadcrumbs.
- Heat oil in a pan to 350°F (175°C) and fry croquettes until golden brown.
- Place on paper towels to drain excess oil. Serve warm.
