Ingredients

  • chicken thighs – 6 pieces (boneless, skinless)
  • soy sauce – 1/4 cup / 60 ml
  • Shaoxing wine – 2 tbsp / 30 ml
  • ginger – 2-inch piece, grated
  • garlic cloves – 3 cloves, minced
  • Sichuan peppercorns – 1 tbsp / 6 g
  • all-purpose flour – 1 cup / 125 g
  • cornstarch – 1/2 cup / 60 g
  • baking powder – 1 tsp / 4 g
  • vegetable oil – for frying
  • salt – 1 tsp / 5 g
  • ground white pepper – 1/2 tsp / 1 g

Instructions

  1. Marinate the chicken: In a bowl, combine soy sauce, Shaoxing wine, grated ginger, minced garlic, and Sichuan peppercorns. Add chicken thighs and mix well. Cover and refrigerate for 2 hours to marinate.
  2. Prepare the coating: In a bowl, mix together the all-purpose flour, cornstarch, baking powder, salt, and ground white pepper.
  3. Heat the oil in a deep frying pan over medium-high heat.
  4. Coat the marinated chicken thoroughly in the flour mixture, shaking off any excess.
  5. Fry the chicken: Gently place the chicken thighs in the hot oil, frying in batches for about 5-6 minutes on each side, or until golden brown and cooked through.
  6. Drain on a paper towel-lined plate to remove excess oil.
  7. Serve immediately.
