Ingredients

  • beef round roast (coxão duro) – 2 lbs / 900 g
  • olive oil – 2 tbsp / 30 ml
  • large onion, finely chopped – 1
  • garlic cloves, minced – 3
  • bay leaves – 2
  • beef broth – 2 cups / 480 ml
  • red wine – 1 cup / 240 ml
  • carrots, sliced – 2
  • potatoes, peeled and quartered – 3
  • fresh parsley, chopped – 2 tbsp / 8 g
  • salt and pepper – to taste

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear the beef round roast on all sides until browned.
  2. Remove the beef and set aside. In the same pot, add onions and garlic, sauté until onions are translucent.
  3. Return the beef to the pot, add bay leaves, beef broth, and red wine. Season with salt and pepper.
  4. Bring to a boil, then reduce heat to low, cover the pot, and simmer for 1.5-2 hours or until beef is tender.
  5. Add carrots and potatoes to the pot, cook for an additional 30 minutes until vegetables are soft.
  6. Remove bay leaves, garnish with fresh parsley before serving.
