Conchas are iconic Mexican sweet breads, recognizable by their shell-like appearance and sugary topping. These delightful pastries are deeply rooted in Mexican culinary traditions, often found in panaderías (bakeries) across the country. The name ‘concha’ means ‘shell’ in Spanish, reflecting the swirl pattern on top that mimics a seashell. Typically enjoyed with a warm cup of coffee, conchas are a beloved treat in Mexican households.
Ingredients
- all-purpose flour – 4 cups / 480 g
- granulated sugar – 1/2 cup / 100 g
- instant yeast – 2 1/4 tsp / 7 g
- salt – 1 tsp / 5 g
- warm milk – 3/4 cup / 180 ml
- unsalted butter, softened – 1/2 cup / 115 g
- large eggs – 2 eggs
- vanilla extract – 1 tsp / 5 ml
- confectioners’ sugar – 2/3 cup / 80 g
- cocoa powder – 2 tbsp / 15 g
Instructions
- In a large bowl, combine flour, granulated sugar, yeast, and salt.
- Add warm milk, butter, eggs, and vanilla. Mix until a dough forms.
- Knead the dough on a floured surface for 10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover, and let rise in a warm place for 2 hours, or until doubled in size.
- For the topping, mix confectioners’ sugar with softened butter and half of the flour to form a paste. Divide in half, and mix cocoa powder into one half for chocolate flavored topping.
- Divide the risen dough into 12 pieces, shape into balls and place on baking sheets.
- Flatten each ball slightly, spread a piece of the topping paste over each and cut shell patterns on top.
- Preheat the oven to 350°F (175°C) and bake the conchas for 20-25 minutes until the tops are lightly golden brown.
