Ingredients

  • fresh conch meat – 1 pound / 450 g
  • all-purpose flour – 1 cup / 120 g
  • cornmeal – 1/2 cup / 60 g
  • baking powder – 1 tsp
  • salt – 1 tsp
  • black pepper – 1/2 tsp
  • cayenne pepper – 1/4 tsp
  • green bell pepper, finely chopped – 1/2 cup
  • red bell pepper, finely chopped – 1/2 cup
  • onion, finely chopped – 1/2 cup
  • garlic, minced – 2 cloves
  • egg – 1 large
  • milk – 3/4 cup / 180 ml
  • vegetable oil, for frying – 2 cups / 480 ml

Instructions

  1. Clean and tenderize the conch meat using a meat mallet, then chop coarsely.
  2. In a large bowl, mix the flour, cornmeal, baking powder, salt, black pepper, and cayenne pepper.
  3. Add the finely chopped green bell pepper, red bell pepper, onion, and garlic. Stir to combine.
  4. Beat the egg and milk together, then add to the dry ingredients. Stir to form a batter.
  5. Fold in the conch meat gently.
  6. Heat the vegetable oil in a large skillet until hot.
  7. Drop spoonfuls of the conch batter into the hot oil and fry until golden brown, about 3-4 minutes per side.
  8. Remove and drain on paper towels. Serve warm with dipping sauce.
