Colcannon is a traditional Irish dish that blends the humble potato with hearty greens, often cabbage or kale, for a comforting, nourishing experience. This rustic dish has been a staple in Irish households for centuries, believed to have originated as a way to stretch ingredients through lighter harvest months. Typically served around Halloween, it is steeped in folklore and was once used as a symbol of fortune-telling, with coins hidden inside to be found by lucky diners. Our version brings an elevated, award-winning quality while remaining true to its heritage roots.
Ingredients
- russet potatoes – 2 pounds / 900 g
- kale or green cabbage, chopped – 4 cups / 280 g
- unsalted butter – 1/2 cup / 115 g
- scallions, chopped – 6 whole / 60 g
- whole milk – 1 cup / 240 ml
- salt – 1 teaspoon / 5 g
- black pepper – to taste
Instructions
- Peel and chop the potatoes into evenly sized chunks. Boil in salted water until tender, about 15-20 minutes.
- While the potatoes are boiling, melt 1/4 cup of butter in a large pan over medium heat. Add the chopped kale or cabbage, cooking until soft, about 5-7 minutes.
- In a separate saucepan, heat the milk just until small bubbles begin to form around the edge, then keep warm.
- Drain the potatoes and return them to the pot. Mash with a potato masher until smooth.
- Gradually add the warm milk and remaining 1/4 cup of butter to the potatoes, mixing until creamy.
- Fold in the cooked greens and scallions. Season with salt and black pepper to taste.
- Transfer to a serving dish and make a small well in the center. Add a pat of butter, allowing it to melt before serving.
