Codornizes, or Portuguese-style quail, is a delectable meat dish revered in Portuguese cuisine. Ingredients
- quail – 8 whole / 1.5 kg
- olive oil – 1/4 cup / 60 ml
- garlic cloves – 6 minced
- dry white wine – 1 cup / 240 ml
- lemon juice – 2 tablespoons / 30 ml
- rosemary – 2 tablespoons fresh, chopped
- thyme – 1 tablespoon fresh, chopped
- bay leaves – 2
- salt – 1 teaspoon
- black pepper – 1 teaspoon, freshly ground
Instructions
- Preheat your oven to 200°C (390°F).
- In a large bowl, combine olive oil, garlic, white wine, lemon juice, rosemary, thyme, salt, and pepper.
- Add the quail to the bowl and massage the marinade into the meat. Allow the quail to marinate for at least 30 minutes.
- Arrange the quail in a roasting pan and pour over any remaining marinade. Add bay leaves to the pan.
- Roast in the preheated oven for 25-30 minutes or until the quail is golden brown and cooked through.
- Serve hot, garnished with fresh herbs if desired.
