Ingredients

  • long-grain white rice – 2 cups / 400 g
  • coconut milk – 1 can / 400 ml

  • grated coconut – 1/2 cup / 50 g
  • sugar – 2 tbsp / 25 g
  • salt – 1 tsp / 6 g
  • vegetable oil – 2 tbsp / 30 ml

Instructions

  2. In a large saucepan, heat the vegetable oil over medium heat.
  3. Add the grated coconut and stir until it turns golden brown, about 5 minutes.
  4. Stir in the rice, coating it well with the oil and coconut.
  5. Pour in the coconut milk, water, sugar, and salt, stirring to combine.
  6. Bring the mixture to a boil over high heat, then reduce the heat to low, cover, and simmer for about 20 minutes or until the rice is tender and the liquid is absorbed.
  7. Remove from heat and let it sit covered for another 5 minutes before serving.
