Coco bread is a beloved Jamaican sweet bread known for its soft, buttery texture and hint of coconut flavor. Ingredients
- All-purpose flour – 4 cups / 500 g
- Granulated sugar – 1/4 cup / 50 g
- Active dry yeast – 2 1/4 tsp / 7 g
- Salt – 1 tsp / 5 g
- Warm milk – 3/4 cup / 180 ml
- Warm coconut milk – 3/4 cup / 180 ml
- Unsalted butter – 4 tbsp / 57 g
Instructions
- In a large bowl, combine the flour, sugar, yeast, and salt.
- Gradually add the warm milk and coconut milk, mixing until the dough begins to come together.
- Knead the dough on a floured surface for about 10 minutes until smooth.
- Return the dough to the bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
- Divide the dough into 8 equal pieces and roll each piece into a ball.
- Flatten each ball into a disk and brush with melted butter.
- Fold the disk in half and place on a parchment-lined baking sheet.
- Cover and let rise again for 20-30 minutes.
- Preheat the oven to 350°F (175°C) and bake coco bread for 15-20 minutes or until golden brown.
- Cool slightly on a wire rack before serving.
