  • Celery – 2 stalks / 120 g, diced
  • Garlic – 2 cloves, minced
  • Russet Potatoes – 2 medium / 400 g, peeled and diced
  • Thyme (dried) – 1 tsp
  • Bay leaf – 1 leaf
  • Salt – to taste
  • Black Pepper – to taste
  • All-purpose flour – 2 tbsp / 16 g
  • Milk – 2 cups / 480 ml
  • Heavy cream – 1 cup / 240 ml

Instructions

  1. In a large pot, cook the bacon over medium heat until crispy. Remove and set aside, leaving the drippings.
  2. Add butter to the pot with bacon drippings. Sauté onions, celery, and garlic until soft.
  3. Stir in flour to coat vegetables, cooking for about 2 minutes.
  4. Gradually add milk, stirring constantly to avoid lumps.
  5. Add potatoes, thyme, bay leaf, clams with juice, salt, and pepper. Simmer until potatoes are tender, about 15 minutes.
  6. Stir in the cream and let heat through without boiling. Adjust seasoning if necessary.
  7. Serve hot, garnished with crispy bacon.
