Ingredients

  • pork shoulder – 1 lb / 450 g
  • carrots – 2 medium, diced
  • celery sticks – 2, diced
  • onion – 1 large, chopped
  • potatoes – 3 medium, cubed
  • tomatoes – 2 large, chopped
  • cabbage – 1/4 head, shredded
  • bell pepper – 1, chopped
  • vegetable broth – 8 cups / 1.9 L
  • fermented wheat bran (bors) – 1 cup / 240 ml
  • sunflower oil – 2 tbsp / 30 ml
  • parsley – 1 small bunch, chopped
  • dill – 1 small bunch, chopped
  • salt and pepper – to taste

Instructions

  1. Heat the sunflower oil in a large pot over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the diced carrots, celery, and bell pepper and cook for 5 minutes, stirring occasionally.
  3. Add the pork shoulder to the pot, cooking until the meat is browned on all sides.
  4. Pour in the vegetable broth, bring to a boil, then reduce the heat and simmer for about 30 minutes.
  5. Add the potatoes, tomatoes, and cabbage to the soup. Continue to simmer for another 20 minutes or until the vegetables are tender.
  6. Stir in the fermented wheat bran (bors) and season with salt and pepper to taste. Simmer for an additional 5 minutes.
  7. Remove the pot from heat and stir in the chopped parsley and dill before serving.
