Ingredients
- pork shoulder – 1 lb / 450 g
- carrots – 2 medium, diced
- celery sticks – 2, diced
- onion – 1 large, chopped
- potatoes – 3 medium, cubed
- tomatoes – 2 large, chopped
- cabbage – 1/4 head, shredded
- bell pepper – 1, chopped
- vegetable broth – 8 cups / 1.9 L
- fermented wheat bran (bors) – 1 cup / 240 ml
- sunflower oil – 2 tbsp / 30 ml
- parsley – 1 small bunch, chopped
- dill – 1 small bunch, chopped
- salt and pepper – to taste
Instructions
- Heat the sunflower oil in a large pot over medium heat. Add the chopped onion and sauté until translucent.
- Add the diced carrots, celery, and bell pepper and cook for 5 minutes, stirring occasionally.
- Add the pork shoulder to the pot, cooking until the meat is browned on all sides.
- Pour in the vegetable broth, bring to a boil, then reduce the heat and simmer for about 30 minutes.
- Add the potatoes, tomatoes, and cabbage to the soup. Continue to simmer for another 20 minutes or until the vegetables are tender.
- Stir in the fermented wheat bran (bors) and season with salt and pepper to taste. Simmer for an additional 5 minutes.
- Remove the pot from heat and stir in the chopped parsley and dill before serving.
