Ingredients
- Beef chuck – 500 g / 1.1 lbs
- Carrots – 2 medium, diced
- Celery stalks – 2, diced
- Onion – 1 large, chopped
- Potatoes – 2 medium, cubed
- Tomatoes – 3, chopped
- Borș – 300 ml / 1.25 cups
- Bay leaves – 2
- Salt and pepper – to taste
- Parsley – a small bunch, chopped
- Vegetable oil – 2 tbsp
- Water – 2 liters / 8 cups
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and cook until translucent.
- Add the beef chunks to the pot, browning them on all sides.
- Introduce the diced carrots and celery, stirring occasionally for 5 minutes.
- Pour in the water and add bay leaves, bringing the mixture to a boil. Reduce to a simmer and cook for 1 hour or until the beef is tender.
- Add the cubed potatoes and chopped tomatoes. Cook for an additional 20 minutes.
- Stir in the borș, seasoning with salt and pepper. Simmer for another 10 minutes.
- Remove from heat, add chopped parsley, and adjust seasoning if necessary before serving.
