Ingredients
- Red orach leaves – 500 g / 1 lb
- Olive oil – 2 tbsp
- Onion – 1 medium, diced
- Carrot – 1 large, grated
- Parsley root – 1, grated
- Tomatoes – 400 g / 14 oz can, diced
- Water – 6 cups / 1.5 L
- Lemon juice – 2 tbsp
- Salt – to taste
- Black pepper – to taste
- Sour cream – for serving (optional)
- Fresh dill – for garnish (optional)
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion, grated carrot, and parsley root, and sauté until the vegetables are soft, about 5 minutes.
- Add the diced tomatoes and red orach leaves, and cook for another 3-4 minutes until the orach leaves wilt.
- Pour in the water, and bring the mixture to a gentle boil.
- Reduce the heat and simmer for 20 minutes.
- Season with salt, black pepper, and lemon juice to taste.
