- eggplant, cubed – 1 large / 400 g
- zucchini, sliced – 2 medium / 300 g
- potatoes, cubed – 2 large / 400 g
- canned tomatoes, crushed – 400 g / 14 oz
- vegetable broth – 500 ml / 2 cups
- fresh basil, chopped – handful / 15 g
- salt – to taste
- black pepper – to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add pancetta and cook until golden brown.
- Add the chopped onion and minced garlic; sauté until the onion is translucent.
- Stir in the eggplant, zucchini, and potatoes, cooking for 5 minutes until slightly tender.
- Pour in the crushed tomatoes and vegetable broth. Bring the stew to a simmer.
- Reduce the heat to low and cover the pot. Let it simmer for 30-40 minutes until vegetables are tender.
