Ingredients

  • ripe tomatoes – 1 lb / 450 g, diced
  • dry white wine – 1 cup / 240 ml
  • fish stock – 2 cups / 480 ml
  • fresh parsley – 1/4 cup / 15 g, chopped
  • bay leaf – 1
  • salt – to taste
  • black pepper – to taste
  • potato – 2 medium, sliced
  • paprika – 1 tsp / 5 g

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and bell pepper, sauté until soft.
  2. Stir in garlic and cook for another 1-2 minutes until fragrant.
  3. Add tomatoes and cook until they break down and form a sauce.
  4. Pour in white wine, let it reduce for 2-3 minutes.
  5. Stir in fish stock, parsley, bay leaf, salt, pepper, and paprika.
  6. Add potato slices and bring the mixture to a simmer. Cook until potatoes are tender.
  7. Place fish fillets into the pot, cover, and cook until the fish is cooked through and flaky.
  8. Check seasoning and adjust if needed. Serve hot with fresh parsley on top.
