- egg noodles – 400 g / 14 oz
- cooked chicken breast, sliced – 250 g / 9 oz

- snow peas – 100 g / 3.5 oz
- soy sauce – 3 tablespoons
- oyster sauce – 2 tablespoons
- garlic, minced – 2 cloves
- ginger, grated – 1 teaspoon
- green onions, sliced – 2 stalks
Instructions
- Cook egg noodles according to package instructions, drain, and set aside.
- Heat 2 tablespoons of vegetable oil in a large wok over medium-high heat.
- Add garlic and ginger, stir-frying for 30 seconds until fragrant.
- Add bell pepper, carrot, and snow peas, stir-frying for 2-3 minutes until vegetables are tender-crisp.
- Add sliced chicken breast and stir to combine.
- In a small bowl, mix soy sauce and oyster sauce, pour over the chicken and vegetables.
- Add cooked noodles to the wok, tossing everything together until well-coated in sauces.
- Add the remaining tablespoon of vegetable oil around the edges of the wok to crisp the noodles slightly.
- Garnish with sliced green onions before serving.
