Ingredients
- lamb shoulder – 1 lb / 450 g
- onion – 1 large / 150 g
- carrots – 2 medium / 200 g
- potatoes – 3 medium / 450 g
- tomato paste – 2 tbsp / 30 g
- garlic – 3 cloves
- water – 6 cups / 1.4 liters
- salt – 1 tsp / 5 g
- black pepper – 1/2 tsp / 2 g
- cumin – 1 tsp / 5 g
- fresh parsley – 1/4 cup / 15 g
Instructions
- Dice the lamb into large chunks.
- Finely chop the onion, and slice the carrots and potatoes into bite-sized pieces.
- In a large pot, brown the lamb pieces over medium heat until well-seared.
- Add the chopped onion and cook until transparent.
- Stir in the tomato paste and garlic, cooking until fragrant.
- Pour in the water, reduce heat, and simmer for 30 minutes.
- Add the carrots and potatoes, cooking until the vegetables are tender.
- Season with salt, black pepper, and cumin.
- Garnish with chopped fresh parsley before serving.
