Chleb prądnicki is a traditional Polish rye bread originating from the region of Kraków. This bread, often associated with hearty, rustic Polish cuisine, is known for its dense texture and distinct sourdough flavor, resulting from a long fermentation process. Historically baked in wood-fired ovens, this bread holds a cherished place in Polish food heritage and has been designated as a regional specialty in Poland.
Ingredients
- Rye flour – 500 g / 4 cups
- All-purpose flour – 250 g / 2 cups
- Water – 375 ml / 1.5 cups
- Active sourdough starter – 200 g / 1 cup
- Salt – 15 g / 1 tbsp
- Caraway seeds – 1 tbsp
- Honey – 1 tbsp
- Vegetable oil – 1 tbsp
Instructions
- In a large mixing bowl, combine rye flour, all-purpose flour, and salt.
- In a separate bowl, mix sourdough starter, water, honey, and vegetable oil.
- Pour the wet mixture into the dry ingredients and mix until a dough forms.
- Knead the dough on a floured surface for about 10 minutes until smooth.
- Place the dough in an oiled bowl, cover with a damp cloth, and leave to rise in a warm place for 3-4 hours, or until doubled in size.
- Preheat your oven to 220°C (428°F).
- Punch down the dough, shape into a loaf, and place on a parchment-lined baking tray.
- Sprinkle with caraway seeds and cover lightly with a cloth. Let it rest for another 30 minutes.
- Bake the loaf for 35-40 minutes or until the crust is a deep golden brown and the bread sounds hollow when tapped on the bottom.
- Cool on a wire rack before slicing.
