Ingredients

  • cornmeal – 2 cups / 320 g
  • tapioca flour – 1 cup / 120 g
  • cheddar cheese, shredded – 1 cup / 100 g
  • unsalted butter – 1/2 cup / 113 g
  • milk – 1 cup / 240 ml
  • eggs – 2 large
  • ground beef – 1 lb / 450 g
  • onion, chopped – 1 medium / 150 g
  • garlic, minced – 2 cloves
  • cumin – 1 tsp / 5 g
  • paprika – 1 tsp / 5 g
  • salt – to taste
  • black pepper – to taste
  • vegetable oil – 1 tbsp / 15 ml

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat the vegetable oil over medium heat. Add the chopped onion and garlic, and sauté until translucent. Add the ground beef, cumin, paprika, salt, and pepper. Cook until the beef is browned and fully cooked. Set aside to cool.
  3. In a mixing bowl, combine the cornmeal, tapioca flour, and shredded cheddar cheese.
  4. Melt the butter and add to the dry ingredients along with milk and eggs. Mix until a dough forms.
  5. Roll out the dough and cut out rounds using a cookie cutter.
  6. Place a spoonful of the beef mixture on each round, fold over, and seal the edges to create a half-moon shape.
  7. Place on a baking sheet and bake for 25-30 minutes until golden brown.
