Chintakaya Chaap is a delectable sour and savory stew hailing from the southern regions of India. Traditionally crafted with tangy raw tamarind, this dish is known for its bold flavors and aromatic spices. The raw tamarind, known as ‘chintakaya’, imparts a unique tartness that cuts through the robust flavors, making it a popular comfort food. Ingredients
- raw tamarind (chintakaya) – 100 g / 3.5 oz
- lamb chops – 500 g / 1.1 lbs
- onion, finely sliced – 1 large / 150 g
- tomatoes, chopped – 2 medium / 200 g
- ginger-garlic paste – 2 tbsp / 30 g
- curry leaves – 10 leaves
- red chili powder – 1 tsp / 5 g
- turmeric powder – 1/2 tsp / 2.5 g
- coriander powder – 1 tbsp / 15 g
- salt – to taste
- oil – 2 tbsp / 30 ml
- water – 2 cups / 480 ml
Instructions
- Soak the raw tamarind in warm water for 15 minutes. Extract the juice and set aside.
- Heat oil in a large pan and add curry leaves and sliced onions. Sauté until onions are golden brown.
- Add ginger-garlic paste and sauté for an additional 2 minutes.
- Introduce the lamb chops and cook until browned on all sides.
- Stir in chopped tomatoes, chili powder, turmeric, coriander powder, and salt. Cook until the tomatoes are soft.
- Pour in the tamarind juice and water. Stir, cover, and simmer on low heat for 45 minutes or until the meat is tender.
- Serve hot with steamed rice.
