Chingri Malai Curry is a luscious Bengali dish that hails from the rich culinary tradition of the Bengal region in India. Ingredients
- prawns – 500 g
- coconut milk – 400 ml / 1 can
- onion – 2 medium, finely sliced
- ginger-garlic paste – 2 tbsp
- mustard seeds – 1 tsp
- green chilies – 2, slit
- cinnamon stick – 1 inch
- cardamom pods – 4
- turmeric powder – 1/2 tsp
- coriander powder – 1 tsp
- salt – to taste
- sugar – 1 tsp
- vegetable oil – 2 tbsp
- fresh coriander leaves – for garnish
Instructions
- Clean and devein the prawns, then marinate with a pinch of salt and turmeric powder for 15 minutes.
- In a pan, heat oil and fry the prawns until they turn pink. Remove and set aside.
- In the same pan, add mustard seeds, cinnamon stick, and cardamom pods. Fry for a minute until aromatic.
- Add the sliced onions and sauté until golden brown.
- Stir in the ginger-garlic paste and green chilies, cooking for another 2-3 minutes.
- Add the remaining turmeric powder, coriander powder, salt, and sugar. Mix well.
- Pour in the coconut milk, bring it to a simmer, and let the sauce thicken for about 8-10 minutes.
- Return the prawns to the pan and cook for an additional 5 minutes, allowing the flavors to meld.
- Garnish with fresh coriander leaves and serve hot with rice.
