Ingredients
- red chillies – 10 pieces / 100 g
- garlic cloves – 4 cloves / 15 g
- ginger – 1 inch piece / 10 g
- tamarind paste – 2 tablespoons / 30 g
- vegetable oil – 2 tablespoons / 30 ml
- salt – 1 teaspoon / 5 g
- sugar – 1 tablespoon / 12 g
- water – 1/4 cup / 60 ml
Instructions
- Remove the stems from the red chillies and soak them in hot water for 15 minutes to soften.
- In a blender, combine soaked chillies, garlic cloves, ginger, and tamarind paste. Blend into a smooth paste.
- Heat vegetable oil in a pan over medium heat. Add the chilli paste and sauté for 5-7 minutes, stirring continuously.
- Add salt, sugar, and water to the pan. Simmer until the oil separates from the chutney, approximately 10 minutes.
- Let the chutney cool before transferring it to a sterilized jar. Store in the refrigerator and use within a week.
