Chiles en Nogada is a celebrated Mexican dish known for its vibrant colors and rich flavors. Originating from Puebla, it symbolizes the three colors of the Mexican flag. Ingredients

  • Poblano chiles – 4 large
  • Ground beef – 250 g / 8.8 oz
  • Ground pork – 250 g / 8.8 oz
  • Onion – 1 medium, finely chopped
  • Garlic – 2 cloves, minced
  • Tomato – 2 medium, chopped
  • Apple – 1, peeled and diced
  • Pear – 1, peeled and diced
  • Peach – 1, peeled and diced
  • Raisins – 1/4 cup / 40 g
  • Almonds – 1/4 cup / 35 g, chopped
  • Cinnamon – 1/2 tsp
  • Allspice – 1/4 tsp
  • Clove – 1/4 tsp
  • Salt – to taste
  • Pepper – to taste
  • Cream cheese – 100 g / 3.5 oz
  • Walnuts – 1 cup / 100 g, soaked and peeled
  • Milk – 1/2 cup / 120 ml
  • Sugar – 1 tbsp
  • Pomegranate seeds – 1/2 cup / 87 g
  • Fresh parsley – for garnish

Instructions

  1. Roast the poblano chiles until blackened. Place in a plastic bag to steam, then peel away skins carefully.
  2. In a skillet, cook the ground beef and pork with onion and garlic until browned.
  3. Add tomatoes, apple, pear, peach, raisins, almonds, cinnamon, allspice, clove, salt, and pepper. Simmer for 15 minutes.
  4. Blend cream cheese, walnuts, milk, and sugar until smooth.
  5. Stuff chiles with the meat mixture and cover with walnut sauce.
  6. Garnish with pomegranate seeds and parsley before serving.
