Ingredients
- chiles poblano – 4 large
- queso fresco (or farmer’s cheese) – 1 cup / 250 g
- onion, finely chopped – 1 medium
- garlic cloves, minced – 2 cloves
- olive oil – 2 tablespoons
- salt – 1 teaspoon
- black pepper – 1/2 teaspoon
- cilantro, chopped – 1/4 cup / 10 g
- lime, for serving – 1
Instructions
- Preheat the oven to 400°F (200°C).
- Roast the chiles poblano on a gas burner or under the broiler in the oven until charred on all sides. Place them in a bowl and cover with plastic wrap for 10 minutes to steam.
- Meanwhile, heat olive oil in a skillet over medium heat. Sauté the onions and garlic until translucent, about 5 minutes.
- In a bowl, crumble the queso fresco and mix with the sautéed onions, garlic, salt, black pepper, and cilantro.
- Peel the charred skin off the chiles and cut a slit down the side of each chile to remove seeds.
- Stuff the chiles with the cheese mixture and place them in a baking dish.
- Bake the chiles for 15 minutes, until heated through and the cheese begins to melt.
- Serve with lime wedges on the side for squeezing over the top.
