Chicksilog is a classic Filipino dish that combines the comforting tastes of garlic fried rice (sinangag), fried egg (itlog), and crispy fried chicken. Ingredients

  • Boneless chicken thighs – 4 pieces / 500 g
  • Eggs – 4 large
  • Cooked white rice – 4 cups / 800 g
  • Garlic – 8 cloves, minced
  • Soy sauce – 1/4 cup / 60 ml
  • Calamansi or lime juice – 2 tablespoons / 30 ml
  • Salt – to taste
  • Black pepper – to taste
  • Vegetable oil – for frying
  • Green onions – 1/4 cup / 25 g, chopped

Instructions

  1. Marinate chicken thighs in soy sauce, calamansi juice, minced garlic, salt, and black pepper for at least 30 minutes.
  2. Heat vegetable oil in a frying pan over medium heat. Fry the marinated chicken until golden brown and cooked through. Remove and set aside.
  3. In the same pan, scramble or fry the eggs to your desired doneness.
  4. For the garlic fried rice: Add a little oil to the pan if needed, then sauté the remaining minced garlic until fragrant. Add the cooked rice and stir-fry for a few minutes. Season with salt and pepper to taste.
  5. Serve the fried chicken, garlic fried rice, and eggs together on a plate. Garnish with chopped green onions. Enjoy!
