Ingredients
- chicken, bone-in thighs and breasts – 4 lbs / 1.8 kg
- olive oil – 1/4 cup / 60 ml
- russet potatoes, quartered – 4 large / 800 g
- garlic, minced – 8 cloves
- white wine – 1 cup / 240 ml
- chicken broth – 1 cup / 240 ml
- frozen peas – 1 cup / 150 g
- dried oregano – 1 tsp
- thyme, fresh – 1 tsp
- parsley, chopped – 1/4 cup / 15 g
- salt – to taste
- black pepper – to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Season chicken pieces with salt and black pepper.
- Heat olive oil in a large ovenproof skillet over medium-high heat.
- Brown chicken pieces in oil until golden, about 5 minutes per side.
- Remove chicken and set aside. In the same skillet, add potatoes and sauté until they’re golden.
- Add garlic and cook for 1 minute until fragrant.
- Pour in white wine to deglaze the skillet, scraping up any browned bits.
- Return chicken to the skillet, add chicken broth, oregano, and thyme. Bring to a simmer.
- Transfer the skillet to the oven and roast for 30 minutes.
- Add peas and cook for another 5 minutes.
- Garnish with parsley before serving.
