- Cherry peppers – 1/4 cup / 60 ml, chopped
- Tomato sauce – 1 cup / 240 ml
- Heavy cream – 1/2 cup / 120 ml
- Parmesan cheese – 1/2 cup / 50 g, grated
- Salt – to taste
- Black pepper – to taste
- Fresh parsley – for garnish, chopped
Instructions
- Cook rigatoni pasta in salted boiling water until al dente; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add diced chicken breast and cook until golden brown and cooked through, about 6-8 minutes.
- Add minced garlic, red bell pepper, and cherry peppers to the skillet. Sauté for another 2-3 minutes until vegetables are softened.
- Pour in the tomato sauce and bring to a simmer. Allow to cook for 5 minutes until sauce slightly thickens.
- Reduce heat to low and stir in heavy cream. Add Parmesan cheese, stirring until melted and sauce is creamy.
