Chichinga, also known as ‘suya’ in other West African regions, is a beloved street food from Ghana. This dish consists of spicy, smoky skewers traditionally made with beef or chicken, though variations with other meats also exist. The flavors are bold and complex, characterized by the distinctive peanut and spice rub known as ‘Kelewele’ seasoning that coats the meat before grilling. Originating from Ghana, Chichinga has become a favorite due to its savory, spicy allure and the convenience of skewered meat, perfect for gatherings and social events. Ingredients

  • Beef or Chicken – 2 lbs / 900 g
  • Peanut Butter – 1/4 cup / 60 g
  • Paprika – 1 tbsp / 8 g
  • Cayenne Pepper – 1 tsp / 2.5 g
  • Ginger, ground – 1 tsp / 2.5 g
  • Garlic Powder – 1 tsp / 2.5 g
  • Salt – 1 tsp / 5 g
  • Vegetable Oil – 2 tbsp / 30 ml
  • Onions, sliced – 2 large / 200 g
  • Lemon Juice – 2 tbsp / 30 ml
  • Wooden or Metal Skewers – 12 pieces

Instructions

  1. Cut the beef or chicken into bite-sized cubes.
  2. In a large mixing bowl, combine peanut butter, paprika, cayenne pepper, ginger, garlic powder, salt, and vegetable oil to create a smooth paste.
  3. Add the meat cubes to the paste and mix thoroughly, ensuring each piece is evenly coated.
  4. Cover and refrigerate for at least 1 hour to allow the flavors to meld.
  5. Preheat your grill to medium-high heat.
  6. Thread the marinated meat onto skewers, alternating with onion slices.
  7. Grill the skewers for about 10-15 minutes, turning occasionally, until the meat is cooked through and has a nice char.
  8. Drizzle with lemon juice before serving.
