Ingredients
- all-purpose flour – 2 1/2 cups / 300 g
- granulated sugar – 1/4 cup / 50 g
- salt – 1/4 teaspoon
- baking powder – 1 teaspoon
- eggs – 3 large
- unsalted butter – 2 tablespoons / 30 g, melted
- vanilla extract – 1 teaspoon
- grated lemon zest – from 1 lemon
- vegetable oil – for frying
- powdered sugar – for dusting
Instructions
- In a large mixing bowl, combine the flour, granulated sugar, salt, and baking powder.
- Create a well in the center and add the eggs, melted butter, vanilla extract, and lemon zest.
- Mix the ingredients together, gradually incorporating the flour into the wet ingredients until you form a smooth dough.
- Knead the dough on a lightly floured surface for about 5 minutes until it becomes elastic and smooth.
- Wrap the dough in plastic wrap and let it rest for 30 minutes at room temperature.
- Divide the dough into four pieces and roll each piece out on a floured surface until paper-thin.
- Using a pastry wheel or sharp knife, cut the dough into strips, about 2×5 inches.
- Heat the vegetable oil in a deep pan over medium heat until it reaches 350°F (175°C).
- Fry the strips of dough in batches until golden brown and puffed, about 1-2 minutes on each side.
- Remove the chiacchiere with a slotted spoon and drain on paper towels.
- Dust generously with powdered sugar before serving.
