Chiacchiere are a traditional Italian pastry associated with Carnevale festivities, enjoyed since ancient Roman times when they were known as ‘frictilia.’ These crispy, sweet treats are deep-fried and dusted with powdered sugar, creating a light, airy texture that delights the palate. Often served during festivities, chiacchiere are synonymous with celebration and indulgence, bringing a touch of Italian heritage to any gathering.

Ingredients

  • all-purpose flour – 2 1/2 cups / 300 g
  • granulated sugar – 1/4 cup / 50 g
  • salt – 1/4 teaspoon
  • baking powder – 1 teaspoon
  • eggs – 3 large
  • unsalted butter – 2 tablespoons / 30 g, melted
  • vanilla extract – 1 teaspoon
  • grated lemon zest – from 1 lemon
  • vegetable oil – for frying
  • powdered sugar – for dusting

Instructions

  1. In a large mixing bowl, combine the flour, granulated sugar, salt, and baking powder.
  2. Create a well in the center and add the eggs, melted butter, vanilla extract, and lemon zest.
  3. Mix the ingredients together, gradually incorporating the flour into the wet ingredients until you form a smooth dough.
  4. Knead the dough on a lightly floured surface for about 5 minutes until it becomes elastic and smooth.
  5. Wrap the dough in plastic wrap and let it rest for 30 minutes at room temperature.
  6. Divide the dough into four pieces and roll each piece out on a floured surface until paper-thin.
  7. Using a pastry wheel or sharp knife, cut the dough into strips, about 2×5 inches.
  8. Heat the vegetable oil in a deep pan over medium heat until it reaches 350°F (175°C).
  9. Fry the strips of dough in batches until golden brown and puffed, about 1-2 minutes on each side.
  10. Remove the chiacchiere with a slotted spoon and drain on paper towels.
  11. Dust generously with powdered sugar before serving.
