- Celery stalk, diced – 1 stalk / 70 g
- Chicken or vegetable broth – 4 cups / 960 ml
- Cognac (optional) – 2 tablespoons / 30 ml
- Heavy cream – 1/2 cup / 120 ml
- Salt – to taste
- Black pepper – to taste
- Fresh thyme – 1 sprig
Instructions
- In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
- Add the diced carrot and celery, cooking for another 5-7 minutes until the vegetables are tender.
- Stir in the roasted chestnuts, and pour in the broth. Add the thyme sprig along with salt and black pepper to taste.
- Bring the mixture to a boil, then reduce the heat and let it simmer gently for 20 minutes.
- Remove from heat and discard the thyme sprig. Puree the soup using a hand blender until smooth.
- Stir in the heavy cream and cognac, if using. Adjust seasoning with salt and pepper.
- Reheat gently before serving hot, garnished with additional thyme if desired.
