This is the traditional, time-tested version of the dish. It stays true to its origins, using well-established techniques and ingredients that define its authentic flavor. A perfect starting point for exploring its evolution.
Cheese Quiche, or Quiche au Fromage, is a classic dish originating from the Lorraine region of France. This savory pie is celebrated for its rich and creamy custard filling, typically made with a harmonious blend of cheeses such as Gruyère, Comté, or Emmental, ensconced in a buttery, flaky pastry crust. The dish beautifully exemplifies French cuisine’s ability to transform simple ingredients into sophisticated dishes. Ideal for brunch or a light dinner, cheese quiche has become a beloved staple in homes and cafes worldwide.

Ingredients

  • all-purpose flour – 200 g / 1.5 cups
  • unsalted butter (cold, diced) – 100 g / 7 tbsp
  • water (cold) – 2-3 tbsp
  • eggs – 4 large
  • heavy cream – 240 ml / 1 cup
  • milk – 120 ml / 1/2 cup
  • Gruyère cheese (grated) – 150 g / 1.5 cups
  • salt – 1 tsp
  • black pepper – 1/2 tsp
  • nutmeg – 1/4 tsp

Instructions

  1. In a bowl, mix flour and salt. Add diced butter and combine until mixture resembles coarse crumbs. Gradually add cold water, one tablespoon at a time, mixing until dough comes together. Form into a disc, wrap in plastic, and refrigerate for 30 minutes.
  2. Preheat oven to 180°C (350°F). Roll out dough on a floured surface and fit into a 9-inch quiche pan. Prick the bottom with a fork. Line with parchment and fill with pie weights. Blind bake for 15 minutes, remove weights, and bake for another 5 minutes.
  3. In a large bowl, whisk eggs, cream, and milk. Add salt, pepper, and nutmeg. Stir in grated Gruyère cheese.
  4. Pour the egg mixture into the pre-baked crust. Bake for 35-40 minutes until the filling is set and top is golden brown.
  5. Let cool slightly before serving.

Substitutions

  • Gruyère cheese -> Comté or Emmental cheese
  • heavy cream -> half-and-half or light cream
