Charquicán is a traditional Chilean stew with vibrant roots dating back to the country’s indigenous Mapuche culture. This hearty dish combines a myriad of flavors and textures, utilizing a blend of meats—typically jerked beef known as ‘charqui’—and a colorful array of vegetables. Originally a peasant meal, Charquicán has evolved to become a beloved staple across Chile, embodying a perfect balance of savory, sweet, and spicy notes, making it an ideal comfort dish.
Ingredients
- beef (preferably jerked) – 500 g / 1 lb
- pumpkin or squash – 500 g / 1 lb
- potatoes – 300 g / 2 medium
- corn – 1 cup / 150 g
- green beans – 100 g / 1 cup
- onion – 1 medium / 150 g
- garlic cloves – 3
- paprika – 2 tsp
- cumin – 1 tsp
- vegetable oil – 2 tbsp
- salt – to taste
- black pepper – to taste
- water or beef stock – 2 cups / 480 ml
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent.
- Add the jerked beef, cooking until lightly browned.
- Stir in the paprika, cumin, salt, and black pepper, allowing the spices to toast for about a minute.
- Add the cubed pumpkin, potatoes, corn, and green beans.
- Pour in the water or beef stock, bringing the mixture to a boil. Reduce heat to low and let simmer for 25-30 minutes, or until the vegetables are tender.
- Adjust seasoning as needed. Serve hot, garnished with fresh herbs if desired.
