Chakna is a traditional Indian stew, often prepared as an accompaniment to drinks. Ingredients

  • Goat meat – 500 g / 1.1 lbs
  • Onions – 2 large, finely chopped
  • Tomatoes – 2 large, pureed
  • Ginger-garlic paste – 2 tbsp / 30 g
  • Turmeric powder – 1 tsp / 5 g
  • Red chili powder – 1 tsp / 5 g
  • Garam masala – 1 tbsp / 15 g
  • Cumin seeds – 1 tsp / 5 g
  • Mustard oil – 2 tbsp / 30 ml
  • Salt – to taste
  • Coriander leaves – a handful, chopped
  • Water – 2 cups / 480 ml

Instructions

  1. Heat mustard oil in a large pot over medium heat. Add cumin seeds and let them splutter.
  2. Add onions and sauté until golden brown.
  3. Stir in ginger-garlic paste and sauté for 2 minutes until the raw smell disappears.
  4. Add goat meat and cook until it changes color.
  5. Mix in turmeric powder, red chili powder, garam masala, and salt. Cook for another 2-3 minutes.
  6. Pour in pureed tomatoes and cook until the oil separates from the mixture.
  7. Add water, cover, and simmer for 45 minutes until the meat is tender.
  8. Garnish with chopped coriander leaves before serving.

  • Goat meat -> Lamb or beef
  • Mustard oil -> Vegetable oil or ghee
  • Red chili powder -> Paprika for milder heat
