Chakhchoukha, a traditional dish from the Aurès region of Algeria, is a delicious, hearty meal that combines tender, slow-cooked lamb or chicken with torn pieces of flatbread known as ‘rougag’. The origins of this dish hark back to the nomadic Berber tribes, who would prepare it during communal gatherings and celebrations. Its robust flavors and rich textures make it a beloved culinary treasure across Algeria.

Ingredients

  • Lamb shoulder, boneless – 1 lb / 450 g
  • Olive oil – 3 tbsp / 45 ml
  • Onion, finely chopped – 2 medium / 200 g
  • Garlic cloves, minced – 4 cloves
  • Tomato paste – 2 tbsp / 30 g
  • Cumin powder – 1 tsp / 2 g
  • Paprika – 1 tsp / 2 g
  • Cinnamon stick – 1 stick
  • Chickpeas, canned or pre-cooked – 1 cup / 240 g
  • Chicken broth – 4 cups / 960 ml
  • Salt – to taste
  • Black pepper – to taste
  • Rougag flatbread – 4 sheets

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the lamb shoulder and brown on all sides.
  2. Add the chopped onions and garlic to the pot, cooking until the onions are translucent.
  3. Stir in the tomato paste, cumin, paprika, and cinnamon stick. Continue to cook for 2 minutes to build flavors.
  4. Add the chickpeas and pour in the chicken broth. Bring the mixture to a boil.
  5. Reduce the heat to low, cover, and let simmer for about 1.5 hours or until the lamb is tender.
  6. Season with salt and pepper. Tear the rougag into pieces and place them in a large serving dish.
  7. Pour the lamb and chickpeas mixture over the rougag, ensuring the bread absorbs the sauce well.
