Chairo is a cherished traditional soup from the Andean regions of Bolivia. Known for its hearty and comforting nature, Chairo is a dish that envelops the spirit of Bolivian cuisine with the depth of its flavors and the simplicity of its preparation. Traditionally consumed by the native Aymara and Quechua communities, Chairo integrates ingredients such as chuño, a freeze-dried potato, which is emblematic of Andean agricultural ingenuity. Ingredients

  • beef shank – 1 lb / 454 g
  • onion, diced – 1 large / 150 g
  • garlic cloves, minced – 3 cloves / 15 g
  • carrot, diced – 2 medium / 150 g
  • potato, diced – 2 medium / 300 g
  • freeze-dried potatoes (chuño) – 1 cup / 150 g
  • fresh corn, cut into chunks – 1 ear / 150 g
  • peas, fresh or frozen – 1 cup / 130 g
  • lamb or beef stock – 8 cups / 2 liters
  • oregano – 1 tbsp / 2 g
  • cumin – 1 tsp / 2 g
  • salt – to taste
  • black pepper – to taste

Instructions

  1. In a large pot, boil the beef shank in the stock over medium heat for about 1 hour or until tender.
  2. Remove the beef, strain the stock, and return it to the pot. Shred the beef and add it back to the pot.
  3. Add onion, garlic, carrot, diced potato, and chuño to the pot. Simmer for 30 minutes.
  4. Add corn and peas, along with oregano, cumin, salt, and pepper. Simmer for another 15 minutes until all vegetables are tender.
  5. Ladle soup into bowls and serve hot.
