Cazuela de Ave is a traditional Chilean stew that celebrates the country’s vibrant culinary heritage. This warm and hearty dish is a staple in Chilean cuisine, known for its wholesome ingredients and comforting flavors. Originating from the rural regions of Chile, cazuela de ave brings together the natural bounty of the land, including fresh vegetables and poultry, in one pot. The word ‘cazuela’ implies a rustic pot used for cooking, distinguishing this dish as both a cultural and familial experience, passed down through generations. The authentic recipe harmonizes tender pieces of chicken, corn, potatoes, and pumpkin, with aromatic spices, creating a symphonious medley that is both nourishing and flavorful.

  • carrots, sliced – 2 medium / 150 g
  • rice – 100 g / 1/2 cup
  • paprika – 1 tbsp / 7 g
  • cumin – 1 tsp / 2 g
  • salt – to taste

Instructions

  1. In a large pot, bring the water to a boil and add the chicken pieces. Cook for about 30 minutes, skimming off any foam.

  3. Add the chopped pumpkin, potatoes, corn, and carrots to the pot. Season with salt and black pepper.
  4. Add the rice, stir well, and cover the pot. Let it simmer on low heat for about 20 minutes, or until the vegetables are tender.
  5. Adjust seasoning with more salt and pepper if needed. Garnish with fresh cilantro before serving.
  6. Serve hot, ensuring each bowl has a good mix of vegetables, chicken, and broth.
