Causa, a traditional Peruvian dish, combines layers of mashed potatoes with a tangy yellow chili sauce and a blend of chicken, tuna, or seafood. Ingredients

  • Yellow potatoes – 2 lbs / 900 g
  • Aji amarillo paste – 2 tbsp / 30 g
  • Lime juice – 3 tbsp / 45 ml
  • Vegetable oil – 2 tbsp / 30 ml
  • Salt – 1 tsp / 5 g
  • Cooked chicken breast – 1 1/2 cups / 200 g, shredded
  • Avocado – 1 medium, sliced
  • Red bell pepper – 1, diced
  • Mayonnaise – 1/2 cup / 120 g
  • Black olives – 1/4 cup / 50 g, sliced
  • Hard-boiled eggs – 2, sliced
  • Cilantro – 2 tbsp / 8 g, chopped

Instructions

  1. Boil the potatoes until tender, about 20 minutes. Peel and mash them while warm.
  2. Mix the mashed potatoes with aji amarillo paste, lime juice, vegetable oil, and salt until smooth.
  3. In a bowl, mix the shredded chicken with mayonnaise and red bell pepper.
  4. In a serving dish, spread half of the potato mixture into an even layer.
  5. Add a layer of sliced avocado on top of the potato mixture.
  6. Spread the chicken mixture over the avocado slices.
  7. Top with the remaining potato mixture, smoothing it evenly.
  8. Garnish the top with slices of hard-boiled egg, black olives, and sprinkle with chopped cilantro.

Substitutions

  • Aji amarillo paste -> Sriracha or other mild chili paste
  • Cooked chicken breast -> Tuna or shrimp
  • Cilantro -> Parsley
