Ingredients

  • crab meat – 500 g / 1 lb
  • olive oil – 2 tbsp
  • onion – 1 medium, finely chopped
  • garlic – 2 cloves, minced
  • tomato – 1 medium, chopped
  • red bell pepper – 1/2, chopped
  • lime juice – 2 tbsp
  • coconut milk – 1/2 cup / 120 ml
  • breadcrumbs – 1/2 cup / 60 g
  • parsley – 2 tbsp, chopped
  • coriander – 2 tbsp, chopped
  • hot sauce – to taste
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Heat the olive oil in a pan over medium heat, sauté the onion and garlic until fragrant and translucent.
  2. Add in the tomato and red bell pepper, cooking until softened.
  3. Stir in the crab meat and cook for 5 minutes.
  4. Mix in the lime juice and coconut milk, simmer for 3-5 minutes until the mixture is slightly thickened.
  5. Season with salt, black pepper, and hot sauce to taste.
  6. Remove from heat and stir in the parsley and coriander.
  7. Spoon the mixture into individual shells or ramekins, sprinkle breadcrumbs on top.
  8. Bake in a preheated oven at 180°C (350°F) for 15-20 minutes until the breadcrumbs are golden brown.
  9. Serve hot, garnished with additional parsley if desired.
