  • ginger, minced – 1 tablespoon
  • roasted cashews – 1 cup / 150 g

  • red bell pepper, diced – 1 large
  • sesame oil – 1 teaspoon
  • water – 1/2 cup / 120 ml

Instructions

  1. Cut the chicken breast into small, bite-sized pieces.
  2. In a bowl, combine soy sauce, hoisin sauce, cornstarch, and water to create a sauce.
  3. Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken pieces and stir-fry until browned and cooked through, about 7 minutes.
  4. Add minced garlic and ginger to the skillet and stir for 30 seconds until fragrant.
  5. Stir in the diced red bell pepper and cook for another 2 minutes until slightly tender.
  6. Reduce heat to medium, pour the sauce over the chicken and vegetables, and stir until the sauce thickens.
  7. Add the roasted cashews and green onions, then drizzle with sesame oil, stirring to combine.
  8. Serve immediately with steamed rice.
