Ingredients

  • boneless chicken breast – 4 pieces / 500 g
  • white rice – 2 cups / 400 g
  • black beans – 2 cups / 400 g, cooked
  • ripe plantains – 2 large
  • mixed greens – 4 cups / 240 g
  • tomato – 2 medium, diced
  • cucumber – 1 medium, sliced
  • lime – 2 for juicing
  • olive oil – 2 tbsp / 30 ml
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Season the chicken breasts with salt and pepper. Heat 1 tablespoon of olive oil in a pan and grill the chicken over medium-high heat until cooked through, about 6-7 minutes on each side.
  2. Cook the rice according to package instructions.
  3. For the beans, if using canned, drain and rinse them. Heat in a saucepan over medium heat until warm.
  4. Peel and slice the plantains diagonally. Fry them in the remaining olive oil until golden brown on both sides, about 4-5 minutes.
  5. Mix the mixed greens with the diced tomato and cucumber. Dress with lime juice, salt, and pepper.
  6. Serve each plate with one chicken breast, a serving of rice, a portion of beans, fried plantains, and a side salad.
