Ingredients

  • Skirt steak – 2 lbs / 900 g
  • Orange juice – 1/2 cup / 120 ml
  • Lime juice – 1/4 cup / 60 ml
  • Soy sauce – 1/4 cup / 60 ml
  • Olive oil – 2 tablespoons / 30 ml
  • Garlic, minced – 4 cloves
  • Cilantro, chopped – 1/4 cup / 15 g
  • Jalapeño, seeded and chopped – 1
  • Ground cumin – 1 teaspoon / 2.5 g
  • Black pepper – 1 teaspoon / 2.5 g

Instructions

  1. In a large mixing bowl, combine orange juice, lime juice, soy sauce, olive oil, garlic, cilantro, jalapeño, cumin, and black pepper to create the marinade.
  2. Place the skirt steak in the marinade, ensuring it is thoroughly coated. Cover and refrigerate for at least 2 hours, preferably overnight for deeper flavor.
  3. Preheat your grill to high heat.
  4. Remove the steak from the marinade and let any excess drip off.
  5. Grill the steak for 7-10 minutes on each side, or until it reaches your desired level of doneness.
  6. Allow the steak to rest for 5 minutes, then slice thinly against the grain.
  7. Serve with tortillas, salsa, and your choice of sides.
