Ingredients

  • all-purpose flour – 4 cups / 480 g
  • milk – 1 cup / 240 ml
  • unsalted butter – 1/2 cup / 115 g
  • granulated sugar – 1/4 cup / 50 g
  • instant yeast – 2 1/4 teaspoons / 7 g
  • ground cardamom – 1 tablespoon / 6 g
  • salt – 1 teaspoon / 5 g
  • egg – 1 large
  • brown sugar – 1/2 cup / 100 g
  • ground cardamom (filling) – 1 teaspoon / 2 g
  • salted butter (softened, for filling) – 1/4 cup / 60 g
  • pearl sugar – for sprinkling

Instructions

  1. Warm the milk to around 110°F (43°C) and mix with granulated sugar and yeast. Let it sit for about 10 minutes until foamy.
  2. In a large mixing bowl, combine flour, ground cardamom, and salt. Add the yeast mixture, egg, and melted butter.
  3. Knead the mixture until smooth and elastic, about 10 minutes. Cover and let it rise in a warm place until doubled, about 1–1.5 hours.
  4. For the filling, mix softened butter with brown sugar and extra cardamom.
  5. Roll out the dough into a rectangle (12×20 inches). Spread the filling evenly over the dough.
  6. Fold the dough into thirds, cut into strips, and twist each strip. Form into a knot shape.
  7. Place buns on baking sheets, cover, and let rise for another 30 minutes.
  8. Preheat oven to 400°F (200°C). Brush buns with beaten egg and sprinkle with pearl sugar.
  9. Bake for 15–18 minutes until golden brown. Let cool slightly before serving.
