Instructions
- Prepare the artichokes by removing the tough outer leaves and trimming the stem. Cut off the top third of each artichoke and place them in acidulated water to prevent browning.
- In a bowl, combine the minced garlic, parsley, mint, salt, and pepper.
- Drain the artichokes and fill the center of each with the herb mixture.
- In a deep pan, heat the olive oil and place the artichokes in, cap down. Add white wine and water to the pan, ensuring the artichokes are half submerged.
- Cover the pan and braise over low heat for about 30-40 minutes until the artichokes are tender.
- Serve warm, drizzled with the pan juices.
