Ingredients

  • olive oil – 2 tablespoons / 28 g
  • onion – 1 large, chopped
  • garlic cloves – 3, minced
  • celery stalks – 2, chopped
  • carrots – 2, diced
  • canned tomatoes – 1 can (14 oz / 400 g)
  • chicken broth – 4 cups / 960 ml
  • cannellini beans – 1 can (15 oz / 425 g), drained and rinsed
  • dried oregano – 1 teaspoon / 1 g
  • dried basil – 1 teaspoon / 1 g
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until translucent.
  3. Stir in garlic, celery, and carrots, cooking for 5 more minutes.
  4. Add canned tomatoes and chicken broth, bring to a boil.
  5. Reduce heat to a simmer, add cannellini beans, oregano, and basil.
  6. Season with salt and black pepper.
  7. Simmer for 30 minutes, stirring occasionally.
