Carbonara is a opulent and comforting dish hailing from the Lazio region of Italy, specifically from Rome. This traditional pasta embodies the perfect marriage of creamy egg yolks, crispy pancetta, and pecorino Romano cheese, creating a symphony of flavors with every bite. Its humble origins trace back to the mid-20th century, where it was reputedly crafted by Italian coal miners (carbonai) after a long day’s work, necessitating a fast yet hearty meal.

Ingredients

  • spaghetti – 400 g / 14 oz
  • pancetta – 150 g / 5.3 oz
  • egg yolks – 4 large
  • pecorino Romano cheese, grated – 100 g / 3.5 oz
  • black pepper, freshly ground – 1 tsp / 2 g
  • salt – to taste

Instructions

  1. Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente.
  2. In a frying pan, cook the pancetta over medium heat until crispy, about 4-5 minutes. Remove from heat and set aside.
  3. In a mixing bowl, whisk together the egg yolks and grated pecorino Romano until well combined.
  4. Once spaghetti is cooked, reserve 1 cup of pasta water, then drain.
  5. Quickly add the hot spaghetti to the mixing bowl with egg and cheese mixture while tossing to create a creamy sauce.
  6. If the sauce is too thick, gradually add reserved pasta water, a little at a time, until the desired consistency is reached.
  7. Stir in the pancetta and freshly ground black pepper.
  8. Serve immediately with extra grated pecorino and freshly cracked black pepper on top.
