Ingredients

  • horse mackerel (carapaus) – 800 g / approximately 6 medium fish
  • coarse sea salt – 150 g / 3/4 cup
  • olive oil – 120 ml / 1/2 cup
  • white wine vinegar – 60 ml / 1/4 cup
  • garlic cloves – 4 peeled and crushed
  • bay leaves – 2 leaves
  • fresh parsley – 1/4 cup chopped
  • red onion – 1 large, thinly sliced
  • lemon – 1, sliced into wedges for serving

Instructions

  1. Clean the horse mackerel by descaling and gutting them. Rinse thoroughly under cold water and pat dry.
  2. Generously rub the fish with coarse sea salt, ensuring even coverage. Place them in a glass or ceramic dish, cover, and refrigerate for 5-6 hours, allowing them to cure.
  3. After curing, rinse the fish thoroughly under cold water to remove excess salt. Pat dry with paper towels.
  4. In a large serving dish, layer the mackerel with olive oil, white wine vinegar, crushed garlic, bay leaves, chopped parsley, and sliced red onion. Toss gently to coat.
  5. Cover the dish and refrigerate for an additional hour to let the flavors meld.
  6. Serve cold with lemon wedges on the side.
