Ingredients

  • goat meat, cut into chunks – 2 lbs / 900 g
  • olive oil – 4 tbsp / 60 ml
  • red wine – 1 cup / 240 ml
  • onions, chopped – 2 large / 300 g
  • carrots, diced – 2 medium / 150 g
  • celery stalks, chopped – 2 / 120 g
  • garlic cloves, minced – 4 / 20 g
  • tomatoes, crushed – 1 can / 400 g
  • bay leaves – 2
  • rosemary, fresh – 2 sprigs
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the goat meat and brown on all sides.
  2. Add the chopped onions, carrots, celery, and garlic to the pot. Sauté until the vegetables are softened.
  3. Pour in the red wine, scraping up any browned bits from the bottom of the pot.
  4. Stir in the crushed tomatoes, bay leaves, and rosemary. Season with salt and pepper to taste.
  5. Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for 2.5 to 3 hours, or until the goat meat is tender.
  6. Remove the bay leaves and rosemary sprigs before serving.
