The meat is a cut from the top of the sirloin, known for its juicy texture, marbled fat, and bold flavor. Ingredients

  • Capa de filé (top sirloin cap) – 2 lbs / 900 g
  • Olive oil – 2 tbsp / 30 ml
  • Garlic cloves, minced – 4 cloves
  • Salt – 1 tbsp / 15 g
  • Black pepper, freshly ground – 1 tsp / 5 g
  • Smoked paprika – 1 tsp / 5 g
  • Lemon juice – 2 tbsp / 30 ml

Instructions

  1. Preheat your BBQ grill to medium-high heat.
  2. In a bowl, combine olive oil, minced garlic, salt, black pepper, smoked paprika, and lemon juice to create a marinade.
  3. Rub the marinade evenly over the capa de filé, ensuring all surfaces are covered.
  4. Let the meat marinate at room temperature for about 20 minutes.
  5. Place the meat on the grill, starting with the fat side down. Cook for about 10-12 minutes per side, or until an internal temperature of 135°F (57°C) for medium-rare is reached.
  6. Once cooked to preference, remove from the grill and let rest for 10 minutes to retain the meat’s juices.
  7. Slice against the grain in thin slices and serve immediately.
